If you love no-knead bread but don't want to wait overnight for it to rise, here's a simple and versatile dough that allows you to make various types of bread today! This is our go-to recipe for making sandwich bread, Italian bread, crusty rolls, pizza, and even baguettes. We enjoy the variety we can create from this one simple dough!
We often mix up the dough in the morning, cover it, go to work, come home, flip it once, let it rise again while the oven preheats, then bake it off and enjoy it for dinner!
Ingredients for Basic Tranquility Dough
Gather these ingredients before you start:
3 cups Tranquility flour
1 tablespoon salt
2 teaspoons instant yeast
1 ½ cups lukewarm water
1 tablespoon maple syrup (honey or sugar)
Step 1: Bloom the Yeast
In a large bowl, combine water and syrup. Sprinkle the yeast on top and let it rest until the yeast blooms, resembling little firecrackers in the bowl.
Step 2: The Dough
Measure the flour and salt into the bowl. Mix with a large spoon until the flour is combined into a shaggy dough. Depending on the type and humidity, some flours may require a bit more water.
Step 3: Let Rise
Cover the bowl with a lid, an inverted plate, or plastic wrap, and let the dough rise until it has doubled in size. If your counters are cold, place a towel under the bowl to keep it warm.
Step 4: Flip the Dough
Moisten your fingers with warm water. Gently pull the dough from the bottom of the bowl and fold it over the top. Turn the bowl and repeat this process for four turns. Next, flip the dough over in the bowl and cover it until it expands again.
Step 5: Flip Again
Perform a quarter turn, then pull and flip the dough one or two more times, depending on how much time you have. The dough should become airy and pliable. Typically, we do this once or twice, but the more frequent the actions, the more malleable and airy the dough will become.
Step 6: Shape the Dough
Preheat your oven to 425 degrees Fahrenheit and place your Dutch oven or covered pot inside to warm it up as the oven heats. Next, turn the dough out onto a floured surface. Shape it slightly to match the size of your pot, then cover it with a tea towel and let it rest until the oven reaches the desired temperature.
If you're making sandwich bread, set your oven to 375 degrees Fahrenheit. Do not place the loaf pan in the oven yet; instead, grease it thoroughly. Slightly flatten the dough, fold in the sides, and roll the dough away from you into a football shape. Place the football-shaped dough into the greased loaf pan and let it rise uncovered in a warm place—it works well to set it on top of the oven while it heats.
Step 7: Bake
When the oven is preheated, remove the Dutch oven, remove the lid, and place the bread inside. Cover it and return it to the oven for 30 minutes. After thirty minutes, remove the lid and bake for 10 minutes or until the bread is browned and crispy.
For sandwich bread, wait until the dough has risen about an inch above the sides of the pan before placing it in the oven. Bake for 40 to 45 minutes.
Step 8: Let Cool
Remove the bread from the oven and transfer it to a cooling rack. Do not cut the bread until it has completely cooled.
Once cooled, slice the bread using a sharp chef's knife—not a serrated bread knife. This will give you a cleaner cut, which is especially important for sandwich bread.
We like to experiment by adding different ingredients to the dough, such as rolled and steel-cut oats, pepitas, garlic, and herbs. For instance, to make rye bread, use 2 cups flour + 1 cup dark rye flour and add 4 Tbsp caraway seeds. It makes fantastic rye bread!
