Super Quick and Easy Hamburg Buns

These can be made start to finish including proofing time within 40 minutes!
Ingredients
2 tablespoons active dry yeast
1 cup plus 2 tablespoons warm water
1/3 cup melted organic shortening, butter or use olive oil or avocado oil
1/4 cup sugar
1 large egg, beaten (antibiotic free – we like Nellie’s brand)
1 teaspoon kosher salt
3 to 3-1/2 cups flour (preferably organic and without malted barley. We like Caputo brand "00" flour)
For topping
1 egg yolk (antibiotic free)
1 tablespoons water
2 tablespoons sesame seeds (optional, can also you everything seasoning or kosher salt and caraway seeds for Kimmelwick seasoning)
Instructions
In a large bowl, mix yeast with warm water.
Add oil and sugar, then let the mixture sit for 5 minutes until it becomes foamy.
Whisk in the egg.
Gradually incorporate the salt and flour until a soft dough forms.
Knead the dough using a mixer with a dough hook for 3 to 5 minutes, or by hand on a lightly floured surface until it’s smooth and elastic.
Instead of allowing the dough to rise, divide it into 8 equal portions and shape each into a ball.
Preheat your oven to 425°F.
Place the dough balls on a greased or lined baking sheet. Cover with a kitchen towel and let them rest for 10 minutes.
After resting, brush the buns with an egg wash and sprinkle with seed topping, if desired.
Bake until they are golden brown, approximately 8 to 12 minutes. Allow to cool before slicing.
