Getting to Know No-Knead Bread
We love ciabatta bread! But did you know how easy it is to make? For beginners and seasoned bakers alike, this method is simple, rewarding, and requires minimal hands-on time—perfect for a busy lifestyle. Here's our no-knead ciabatta roll recipe. We were never great at baking bread until we discovered no-knead techniques. These ciabatta rolls are soft and airy inside, with a golden, crusty exterior. They're perfect for sandwiches, burgers, or simply slathering with butter. Learn how easy it is to make ciabatta rolls at home!
Ingredients for Ciabatta Rolls
Gather these ingredients before you start:
3 cups all-purpose flour
1 ½ teaspoons salt
1 teaspoon instant yeast
1 ½ cups lukewarm water
These staples will come together to create a dough that rises beautifully, resulting in delicious ciabatta rolls.
Step 1: Mixing the Dough
In a large mixing bowl, combine the flour, salt, and instant yeast. Use a whisk to mix the dry ingredients thoroughly.
Next, pour in the lukewarm water. Mix it with a wooden spoon or your hands until everything is well combined and a messy, sticky dough forms. This is perfectly fine—the stickiness will help develop the rolls' texture!
Step 2: The First Rise
Cover the bowl with plastic wrap or a clean kitchen towel. Place it in a warm area and let the dough rise for 12 to 18 hours.
A longer rise time not only boosts flavor but also develops gluten naturally. When ready, the dough should have doubled in size, and there will be bubbles on the surface.
Step 3: Shaping the Rolls
Once the dough has risen, lightly flour your work surface and carefully turn the dough out onto it. Avoid deflating the dough by gently shaping it into a large rectangle.
With a bench scraper or sharp knife cut the dough into about 8 equal pieces for standard-sized rolls. No need for perfection here; they’ll relax and expand during the second rise.
Step 4: The Second Rise
Arrange the shaped rolls on a parchment-lined baking sheet, ensuring enough space between them for rising. Cover the rolls with a kitchen towel and let them rise for about 1 hour.
This critical second rise is what gives ciabatta its light and airy structure.
Step 5: Preheating the Oven
While the rolls rise, preheat your oven to 425°F (220°C). To achieve a lovely crust, place a cast iron griddle in the oven while preheating. If you do not have a cast iron griddle, a baking sheet is fine, but add a shallow pan of water on the bottom rack of the oven. This steam creates a crispy outer layer that makes all the difference. We find if we bake them on the cast iron griddle the pan of water is not necessary to achieve a crispy crust.
Step 6: Baking the Rolls
Once the rolls have completed their second rise, remove the towel and slide the parchment with the rolls onto the hot griddle in the oven (or place the baking sheet in the overn). Bake for 20-25 minutes, or until the rolls are golden brown and sound hollow when knocked on the bottom.
For even baking, rotate the baking sheet halfway through the process.
Step 7: Cooling the Rolls
After baking, take the ciabatta rolls out of the oven and transfer them to a wire rack to cool. This step is crucial; it allows the insides to set properly.
Try to resist the intoxicating aroma and let them cool for at least 30 minutes before indulging.
Relishing Your Homemade Ciabatta Rolls

For a fun twist, consider adding ingredients like herbs, cheese, or olives to the dough. These small changes can enhance flavor and create a unique touch to your rolls.
Pro Tip: For an extra tasty treat, try brushing the rolls with olive oil and sprinkling sea salt on top before baking. This gives them an extra layer of flavor and a beautiful finish.
