For beginners and seasoned bakers alike, this method is simple, rewarding, and requires minimal hands-on time—perfect for a busy lifestyle.
Gather these ingredients before you start:
3 cups flour (Spring wheat flour without malted barley. We use Caputo 00.)
1 tablespoon salt
2 teaspoons instant yeast
1 ½ cups lukewarm water
1 tablespoon maple syrup (honey or sugar)
These staples will come together to create a dough that rises beautifully, resulting in delicious ciabatta rolls.
Step 1: Bloom the Yeast
In a large bowl, combine water and syrup. Sprinkle the yeast on top and let it rest until the yeast blooms, resembling little firecrackers in the bowl.
Step 2: The Dough
Measure the flour and salt into the bowl. Mix with a large spoon until the flour is combined into a shaggy dough. Depending on the type and humidity, some flours may require a bit more water.
Step 3: Let Rise
Cover the bowl with a lid, an inverted plate, or plastic wrap, and let the dough rise until it has doubled in size. If your counters are cold, place a towel under the bowl to keep it warm.
Step 4: Flip the Dough
Moisten your fingers with warm water. Gently pull the dough from the bottom of the bowl and fold it over the top. Turn the bowl and repeat this process for four turns. Next, flip the dough over in the bowl and cover it until it expands again.
Step 5: Preheat the Oven
When the dough has risen, preheat your oven to 425°F (220°C). To achieve a lovely crust, place a cast iron griddle in the oven while preheating.
Step 6: Shape the Dough
Lightly flour your work surface and carefully turn the dough out onto it. Avoid deflating the dough by gently shaping it into a large rectangle.
With a bench scraper or sharp knife cut the dough into about 8 equal rectangles. Use more flour as necessary to keep the dough from sticking. No need for perfection here; they’ll relax and expand during the second rise.
Step 7: The Second Rise
Arrange the shaped rolls on a parchment-lined cutting board, ensuring enough space between them for rising. Cover the rolls with a kitchen towel and let them rise for about 1/2 hour or until the oven and cast iron griddle are both preheated.
Step 8: Baking the Rolls
Once the rolls have completed their second rise, remove the towel and slide the parchment with the rolls onto the hot griddle in the oven. Bake for 20-25 minutes, or until the rolls are golden brown and sound hollow when knocked on the bottom.
Step 9: Cooling the Rolls
After baking, take the ciabatta rolls out of the oven and transfer them to a wire rack to cool. This step is crucial; it allows the insides to set properly.
