Low-fat Diets were promoted to improve health.

The government, food industry, physicians, and popular media outlets all touted the benefits of a low-fat diet.

In theory, it makes perfect sense: eating fat will make you fat, so eating low-fat will keep you slim and healthy.

What Changed?

Scientists have more recently discovered specific receptors that drive chronic disease.
We've followed the patterns and connected the dots.

Industrial Agriculture was promoted to efficiently increase food supplies.

In order to meet the short-term increase in export demands, the government promoted the idea of "Get Big or Get Out." Farmers were encouraged to specialize in one crop or product, as this would make it easier to mechanize repetitive tasks and enable the use of chemicals and pharmaceuticals to increase productivity and yield.

As a result, large farms got larger, and smaller farms went out of business.

Food Technology was promoted to increase yield and shelf-life. 

The development of Food Technology advanced to accelerate the chemical reactions of food processing, enhancing quality, consistency, shelf-life, and yield.
